Zoodles with Peanut Sauce
Ingredients:
Dressing:
1/2 cup natural peanut butter
1/2 cup water
1/4 teaspoon salt
1/4 cup rice wine vinegar
1 tablespoon chopped ginger
1/2-1 tablespoon sriracha (depending on spice preference)
1 tablespoon agave
1 tablespoon soy sauce
Zoodles and Toppings:
1 1/2 lbs zucchini
1 cup of red peppers sliced into squares
1 cup cucumber, sliced into half circles
1/2 cup finely diced red onion
1/2 cup roasted and salted peanuts
1/2 cup fresh cilantro, chopped
Directions:
Dressing-
- Combine all ingredients in the blender and blend until smooth. Refrigerate until ready to serve.
Zoodles and Toppings-
- Slice the zucchini into 1/8 inch slices lengthwise by mandolin or hand or use a zoodle maker/spiral cutter to make the zoodles.
- Toss the zoodles with the dressing.
- Salt to taste.
- Top zoodles with red pepper, cucumber, onion, cilantro and peanuts and serve.
