After a late night of studying or a long day of school, sometimes all you need is a quick pick-me-up or sweet treat to get through. A mug cake was one of our go-to snacks during the COVID-19 pandemic, it was a small and simple baked good that reminded us of the little lights in a dark time. Now, it’s a great dessert that brings a nostalgic and contented feeling whenever we make it.
This recipe is easy to make, easy to share and easy to enjoy. It’s chocolatey, comforting and convenient — besides ingredients, all you need is a mug and a microwave. Make sure to add your own twist on it with your favorite toppings. Our preferred ones include powdered sugar, strawberries, chocolate chips or whipped cream.
Ingredients:
4 Tbsp. flour
2 Tbsp. cocoa powder
3 Tbsp. granulated sugar
½ tsp. baking powder
⅛ tsp. salt
¼ cup water
1 ½ Tbsp. butter, oil or mashed banana
¾ tsp. pure vanilla extract
1-2 Tbsp. chocolate chips and dusting of powdered sugar (optional)
Directions:
1. If using butter, melt it, and let it cool beforehand.
2. Combine the flour, cocoa powder, granulated sugar, baking powder and salt in a mug.
3. Mix in the water and vanilla extract into the mug, along with butter/oil/mashed banana, whichever you’re using.
4. Add chocolate chips (optional).
5. Microwave on high for around 2 ½ minutes.
6. Let cool, and dust with powdered sugar (optional).
