Peppermint Hot Chocolate Cookie Cups

Title: Peppermint Hot Chocolate Cookie Cups
Makes: 24 Cookies
Ingredients:
- 1 tube of store bought sugar cookie dough
- 1/4 cup of unsweetened cocoa powder
- 24+ mini candy canes
- 1/2 cup of heavy whipping cream
- 2 tbsp of powdered hot chocolate mix
- 1 cup and 2 oz (separated) of semi sweet chocolate chips
- 1/4 tsp of peppermint extract
Steps:
- Preheat oven to 375° F.
- Break cookie dough into large mixing bowl.
- Add cocoa powder and combine.
- Roll dough into balls.
- Completely cover dough balls in sugar.
- Spray mini muffin pan with baking spray.
- Bake for 11-13 minutes, then let completely cool.
- Cut off curves of candy canes (24 total).
- Put rest of candy canes in ziplock bag. Crush with ice cream scoop.
- Heat up heavy cream in microwave for 1.5 minutes.
- Add powdered hot chocolate mix and combine.
- Add 1 cup of chocolate chips and let sit for 3 minutes.
- Mix until completely melted.
- Add peppermint extract and combine.
- Melt 2 oz of chocolate chips in microwave.
- Dip candy cane handles in chocolate and attach to cookie. May need to hold for a little while.
- Spoon ganache onto cookie cup. Sprinkle with crushed candy cane pieces.
- Enjoy!

Abbie, a senior at Community, is so excited to be one of four print editor-in-chiefs, and she’s loved journalism since her freshman year. Her passion within journalism is straight-up writing; she leaves the design aspect to her journalism buddy, Henry. Abbie is a lover of grammar, and it’s an odd day if she doesn’t get at least three questions about the AP style rules.
Her life outside of the journalism lab consists of one thing: gymnastics. It takes up all of Abbie’s “free time,” but she wouldn’t be who she is today without having spent almost 13 years in the sport. Abbie also loves listening to music — believing that there is at least one song for whatever mood someone is in — and spends much of her money on going to concerts, her happy place. She simultaneously wants May (aka graduation) to come quickly, but also take its time; clearly, she’s terrible at making decisions, so it’s a good thing she has three other editors to help her through this crazy process!
