Recipe: No Bake Peppermint Cheesecake
“Recipe adapted from Cooking Classy”
Title: No Bake Peppermint Cheesecake
Makes: 6 mini cheesecakes
Ingredients:
- 12 chocolate sandwich cookies
- 2 tbsp butter
- 4 oz white baking chips
- 1 1/4 cups heavy whipping cream
- 8 tbsp powdered sugar (confectioners sugar)
- 10 oz cream cheese
- 1/2 tsp peppermint extract
- Red food dye
- 2 piping bags
Steps:
- Pour sandwich cookies into a food processor
- Pulse until fine
- Add Butter and pulse again
- Put into cups dividing evenly
- Melt white chocolate in microwave: staring at 30 second increments then set aside
- Whip whipping cream until soft peaks form
- Add 3 tbsp of sugar and whip until stiff peaks form then let rest in fridge
- Whip cream cheese until soft and fluffy
- Mix in the rest of the powdered sugar and the peppermint extract
- Stir in white chocolate
- Separate into 2 bowls
- Dye one red
- Move into piping bags and pep into cups
- Top with whipped cream
- Let rest for 2 hours and Enjoy!

Abbie spends all of her time at school or at gymnastics practice. She wishes she knew how to speak Bulgarian fluently so she could understand her Bulgarian gymnastics coaches and their children when they’re speaking in Bulgarian. Abbie hopes to do gymnastics at U of M. She has a permanent hole in her right hand from bars, which is somehow her favorite event. Also, she got frostbite in 2013 in the middle of September and almost lost her right index finger:)
