Recipe: No Bake Peppermint Cheesecake

Title: No Bake Peppermint Cheesecake

Makes: 6 mini cheesecakes

Ingredients:

  • 12 chocolate sandwich cookies
  • 2 tbsp butter
  • 4 oz white baking chips
  • 1 1/4 cups heavy whipping cream
  • 8 tbsp powdered sugar (confectioners sugar)
  • 10 oz cream cheese
  • 1/2 tsp peppermint extract
  • Red food dye
  • 2 piping bags

Steps:

  1. Pour sandwich cookies into a food processor
  2. Pulse until fine
  3. Add Butter and pulse again
  4. Put into cups dividing evenly
  5. Melt white chocolate in microwave: staring at 30 second increments then set aside
  6. Whip whipping cream until soft peaks form
  7. Add 3 tbsp of sugar and whip until stiff peaks form then let rest in fridge
  8. Whip cream cheese until soft and fluffy
  9. Mix in the rest of the powdered sugar and the peppermint extract
  10. Stir in white chocolate
  11. Separate into 2 bowls
  12. Dye one red
  13. Move into piping bags and pep into cups
  14. Top with whipped cream
  15. Let rest for 2 hours and Enjoy!
