Communicator Eats: Jonah Klein’s Perfect Pasta Sauce

This week’s #CommunicatorEats features homemade fettuccine with Midnight Sun staff member Jonah Klein’s special sauce! The tender fresh pasta topped with a rich tomato sauce is the perfect pair.

The sauce is straightforward and includes only garlic, olive oil, peeled tomatoes, water and salt to taste.

1 can whole peeled tomatoes
2 cloves of garlic
1/2 cup of water
2 tablespoons olive oil
salt & pepper

1. Heat oil over medium-high heat. Mince garlic, then add to oil, stir, and let sauté until fragrant.
2. Reduce heat to medium, and add in full can of peeled tomatoes. With a fork, break down the tomatoes. Add water, and mix until you have a runny sauce.
3. Add salt and pepper to taste. Stir thoroughly.
4. Let simmer, stirring frequently, until you reach desired consistency (about 5-10 minutes)
5. Spoon over fresh hand-made fettuccine and serve!
