Ingredients:
Cookie Dough:
16 tbsp Cold unsalted butter
1 1/2 cups Brown sugar
1/2 cup Sugar
2 Eggs
2 1/2 tsp Vanilla extract
2 1/4 cups All-purpose flour
3/4 tsp Salt
3/4 tsp Baking soda
1/2 tsp Baking powder
1 tsp Corn starch
1/4 tsp Cinnamon
8 oz Semi-sweet chocolate chips you can add as many as you’d like
Graham crackers
Chocolate bars
Marshmallows (make sure to not to use large marshmallows)
Directions:
Preheat the oven to 350°.
Melt butter in a saucepan— watch closely and stir every 30 seconds until golden brown.
Transfer butter to a medium mixing bowl and add sugar and brown sugar; whisk until combined.
Add eggs one at a time and vanilla extract. Whisk until fully combined.
Slowly fold in your dry ingredients: flour, salt, baking powder, baking soda, cornstarch and cinnamon.
Add chocolate chips and continue mixing until fully combined.
Prepare a baking sheet with parchment paper or oil.
Split graham crackers in half and place on a baking sheet spaced out for room for cookies to spread.
Place pieces of chocolate bars and marshmallows on top of the graham crackers.
Cover with as much cookie dough as necessary so the graham cracker is completely covered.
Bake the cookies for 15 minutes; even if they look underdone, take them out and they will continue to bake on the baking sheet till fully cooled.
One of my favorite things to do when I was younger was baking with my family. My friends and I would also make s’mores by the campfire, and I love and cherish those memories. Recently, I rediscovered my love for baking and sharing that with my friends. One day, when I was scrolling on TikTok, I came across someone making s’more cookies, and it really got my attention. I used the chocolate chip cookie recipe my grandma and I used to make, along with the method I saw on TikTok — covering a graham cracker and marshmallow with dough.
