“My formal job here is a butcher. I primarily do primal cuts of meats ranging from beef, pork, veal, chicken and sometimes we have special orders that we can get from our suppliers for pretty much any type of meat or cuts.  I am born and raised from Chicago. [Being a woman in the meat industry] is quite rare. I get that quite frequently. People are surprised that I’m such a small person and female. It is pretty cool. I do like feeling like I am stepping against stereotypes and doing what I love. I found out that I’m good at this, and it’s interesting to me—meat science, working with meat and meat anatomy. I do primary work with a lot of guys, and it does get conflicting just because I am stereotypically a small person. I presumably can’t do certain cuts or have this particular knowledge or background so I do like feeling like [I’m breaking the stereotype]. People have come up to me and see that this isn’t something that’s typically here. Typically there are these big guys and that’s what people think of. I think it’s cool for me to step out and do something different.”
